Summer means one thing to me- ice cream! If you’ve been following my blog regularly for a while, you’ll know I LOVE everything about ice cream! It’s creamy, it’s refreshing, it invokes memories of childhood and brightens up a summer day.
This recipe is basically a semifreddo, and what I love about it is that it’s so easy to make, and you don’t need any special equipment! I like to pour the mixture into a loaf pan lined with parchment paper, because I find the ice cream freezes well in a rectangular container.
Acai berries are incredibly high in antioxidants, and have a sweet, tart flavour that works well in desserts. I recently started buying the powder, because it’s super concentrated, and a little goes a long way. Goji berries are another staple of mine. I use them regularly in my baked goods, and decided they would make a great addition to this ice cream with their natural sweetness, bright colour and antioxidant properties.
For a creamy texture and mildly sweet flavour, nothing beats coconut milk. It tastes great, gives the ice cream a great mouthfeel, and is rich in complex B vitamins, calcium, magnesium, phosphorus, and iron. Although it helps to add a hint of sweetness, I did find it necessary to add some yacon syrup to sweeten it up and enrich the texture slightly. If you haven’t heard of yacon syrup, I highly recommend you try it! It has the consistency of molasses and is really sweet, so it’s good for baking, but has roughly one third the caloric content of sugar. There is some fairly promising research that suggests that yacon syrup can stimulate the metabolism and aid in weight loss as well. Keep in mind that foods taste less sweet when they’re frozen, so while the mixture may taste overly flavourful before it’s been frozen, it should be perfect once it’s mellowed out in the freezer.
This bright, colourful ice cream will impress everyone, and is easy enough to make on a weeknight! Give it a try the next time you’re in the mood for a sweet frozen treat! Eat well to live well!
- 2 cans Coconut milk
- 1/4 cup Acai powder
- 1/4 cup Goji berries
- 1/4 cup Yacon syrup or any other sweet syrup
- 2 tbsp Desiccated coconut
- 1 cup Frozen strawberries
1. Blend all ingredients together in a blender or food processor, making sure all ingredients are evenly incorporated throughout.
2. Pour the mixture into a freezer-safe container.
3. Cover, and freeze at least 2-4 hours.
