Breakfast is the most important meal of the day! Whether you’re a busy person, a morning person, or not- NEVER skip breakfast! Let’s be honest, though- sometimes, despite our best intentions, we just don’t have the time or energy to invest in a heavy duty breakfast. A simple smoothie or green juice (like my Green Power Juice recipe!) will have to sustain us until we can begin to think about lunch. Other days, however, it’s nice to plan a nice breakfast, gather your loved ones, and plan an exciting day over something yummy and substantial. This recipe is for one of those days.

I love this recipe for a weekend breakfast! It’s got a lot of high energy ingredients, such as coconut, avocado, almond butter and maple syrup! It also contains a high amount of vitamins, antioxidants, and minerals such as calcium and potassium to prepare you for the day ahead. My kids love this recipe, because it’s sweet and creamy- almost like a vegan parfait!

If you wish, layer in your favourite fruit or nuts with the cream for a little extra flavour and texture. This indulgent recipe is great as a start for a brunch, or on its own as a cool summer breakfast! Remember, the fuel you put into your body in the morning will determine how your body responds to the rest of the day. So, as always- eat well to live well!

Green Breakfast with strawberry cream

Ingredients
For the green cream:
  • 1/2 cup Coconut meat
  • 1/2 of Avocado
  • Handful of Spinach
  • Handful of green Grapes
  • 1 tbsp White Almond butter
  • 1/2 cup Coconut water
  • 1 tbsp Raw honey (or maple syrup)
For strawberry cream:
  • 1/2 cup Coconut meat
  • 2 tbsp Coconut cream
  • 1 tbsp Raw honey (or maple syrup)
  • Handful of Strawberries
Instructions
  1. 1. Puree the green cream ingredients together, and set aside in the fridge until ready to use.


    2. Puree the strawberry cream ingredients together and refrigerate until ready to use.


    3. In the bottom of a glass or bowl, layer a few spoonfuls of green cream, followed by the strawberry cream. If you wish, layer in fresh fruit as you go.


    4. Serve immediately
